1 Golden Bai Wei chicken tonic soup package
1 Organic chicken or plain chicken
3-4 pieces Ginger
Open the Golden Bai Wei chicken tonic soup package and soak them in a large bowl with enough water. Set aside for 30 minutes.
Cut chicken into pieces and blanch in a pot of boiling water with 3-4 slices of ginger. This process helps to remove the dirt and blood water from the bones. Pick the chicken pieces out and transfer them to a soup pot.
Rinse the soaked Golden Bai Wei chicken tonic soup herbal mix under tap water and add to the pot with the chicken pieces and add enough water until just covering the chicken. Bring to a boil and then turn to medium-low heat. Simmer for at least 1 hour for a milder soup, or up to 3 hours for a darker and richer soup.
Season with salt before serving.
